Fried Pickles - a new recipe I tried - and they were so tasty!
Start with fresh, local made dill pickles - thick slices (buy them at your local grocer)
Heat one inch of oil in a pot to frying temp.(375)
In a bowl mix 1/2 cup flour, 1 3/4 tsp cajun seasoning, 1/2 tsp italian seasoning, 1/4 tsp cayenne pepper, kosher salt, and 1/2 cup water. Toss the mixture with 2 cups drained and patted dry pickles.
For the sauce:
Mix 1/4 cup mayonnaise, 1 T drained horseradish, 2 tsp ketchup, and 1/4 tsp cajun seasoning.
Place the pickles in the hot oil with slotted spoon, let fry 1-2 minutes til golden, then drain on paper towels. Fry these in two batches so the pan is not too crowded.
Enjoy with the sauce!
